A Snappy Breakfast

I just made myself a quick breakfast, and I enjoyed it so much I thought I would share. Don't expect a lot of recipes from me, but I thought this was interesting. I am calling it a "Snappy Omelet". It's got pretty big flavor, but not too much to early in the day.

As I get older, I find my palate enjoys a little more heat/taste/flavor.

2 medium eggs
1 tbs butter
1 tbs stone ground mustard (or to taste)
1 slice pepperjack cheese
2 slices medium pepperoni
No-salt seasoning (Mrs. Dash, or other)

Heat the butter in a non-stick pan at medium heat. Crack the eggs into a bowl, and stir with a fork to combine, adding the mustard. You should not need to add any more liquid other than the mustard.

Put the eggs in the pan, and cut up the pepperoni into quarters (I used silver dollar-size pepperoni). Season to taste with no-salt seasoning of your choice (I try to restrict my sodium intake)

Stir the eggs around a bit to even the cooking, sprinkle in the pepperoni and tear up the cheese into strips and add.

Fold over the omelet and allow to finish cooking. To "kick it up", you can throw in some hot pepper flakes (or use some hot sauce after plating).

I served with a toasted English Muffin and a mug of coffee.
